Sweet Potato Chili
Description:
Ingredients:
- 2 lbs. of hamburger
- 1 red onion
- 2 T. minced garlic
- 1-28 oz. can of tomato sauce
- 2 cups petite diced tomatoes with juice
- 3 cups beef stock
- 2 cups carrots
- 2 cups celery (optional)
- 5 cups of sweet potatoes
- 2 bay leaves
- ½ tsp of thyme
- 2 tsp salt
- 2 tsp pepper
- Chili powder (as desired)
- 1 T. Oregano
- Red pepper flakes (optional)
Directions: Chop veggies, brown beef, and add ingredients to crock pot. Stir ingredients and let cook on low for 8 hours, or on high for 4 hours.
Why Rachel loves this recipe: I've been making this recipe for my family for about 4-5 years now and it's still a hit. In fact, it's a staple in our house. It's Whole30/Paleo/Dairy free which is really important for a lot of households. It's a very forgiving recipe too. So, if you don't have an ingredient, swap it out for something else. Don't like hamburger, try chicken. Don't like sweet potatoes, try white potatoes. Don't like carrots, try parsnips. You get the idea! ;)
